Tony Moarbes is the owner and chef of Eat Lebanese in Cronulla. Raised in a Lebanese family, he learned early that great Lebanese cooking is built on care, repetition, and respect rather than shortcuts. Trained as a mechanical engineer, Tony brings the same discipline to the kitchen. At markets, he explores Lebanese street food—especially shawarma—cooking over live fire and charcoal. His approach is grounded in a deep understanding of tradition, preserving heritage while allowing it to live naturally in modern, multicultural Sydney.
