Gelato Messina has grown from a single store in Darlinghurst in 2002 to 35 stores nationwide. The team still makes everything from scratch, including every base, chunk, swirl, and inclusion, all produced by their pastry chefs at the Marrickville HQ. Across its stores, Gelato Messina offers 40 freshly churned flavours daily—35 classics and five weekly specials—supported by its own Jersey dairy farm, hazelnut farm, chocolate-making facilities, and in-house dulce de leche. Known for reviving nostalgic flavours and flavour nods to the past, Gelato Messina looks forward to showcasing these creations at the Biennale.
